What do we really mean when speak of product quality? And how can we study and assess it? There are no simple answers to these questions. Quality is complex, and there are no universal indicators. Further, both the perception and the rating of quality have an individual dimension.
In this workshop we are not going to present a universal concept of food quality. Neither are we going to discuss specific analytical methods. Instead, we are going to elaborate a research concept in a participatory process that considers the individual perspectives of the participants. By doing so, we create the potential to get answers to our questions, instead of indicators without context.
